Today we have a really refreshing, light and gorgeous salad for you to try! This vegan spiralized Zucchini Salad is bursting with herbal flavours and is almost too pretty to eat!
This salad could not be more simple to make. Spiralize zucchini and peppers, grate some carrots, sprinkle some pumpkin seeds and whisk together a vinaigrette! Fresh, healthy, loaded with veggies and protein (thanks to the pumpkin seeds). We love this salad as a light lunch, a snack or an appetizer. - Juice of 2 lemons
- 3 tbsp apple cider vinegar
- 3 tbsp maple syrup
- 1 ½ cups of olive oil
- 1 tsp sea salt
- ¼ tsp black pepper
- ¼ cup mixed dried basil, oregano and thyme
- Or add small handful of fresh herbs of your choice
Spiralize the zucchini and red pepper, or thinly shred with a vegetable peeler or mandolin. Set aside.
For the dressing, add all ingredients to a processor, blend until smooth.
To assemble, place zucchini, pepper and grated carrot in a mixing bowl. Add pumpkin seeds and drizzle desired amount of dressing and toss.
