Blood oranges are here! Let's bring Spring back after this long bout of cold weather with a salad featuring this beautiful citrus fruit.
High in Vitamin C, very much need this time of year, folic acid and calcium for healthy, strong teeth and bones. You can distinguish them from an average orange by looking for the blushed pink rind which is due to the anthocyanins they contain. These are antioxidants that fight inflammation and free radicals, which try to destroy healthy cells in our body.
Blood oranges are also great for compotes, desserts or a quick seasonal snack when you can find them.

Blood Orange & Mixed Greens Salad
2 blood oranges, peeled and sectioned
2 cups of mixed greens, spinach, arugula, kale
1 tsp grated lemon zest
1 tsp grated ginger
¼ cup walnuts
½ small red onion, thinly sliced
Juice of one blood orange
2 tbsp olive oil
Pinch of sea salt
Pinch of black pepper
1 minced garlic clove
1 tsp chopped fresh mint or dried
Place the greens in a large mixing bow and add all other salad ingredients.
Whisk the dressing together and toss with this beautiful salad!
