Feeling a little stuck with what to make for dinner? We all know the feeling and sometimes the answer is just a cookbook away. Often though, we just want to make something a little different without a lot of fuss or time spent trying to figure out something new.
For one of those evenings, try this rustic garlic mashed potato recipe that we developed here at Wanigan.
It transforms a bunch of potatoes into an interesting side dish with just a few steps. Quick and easy to make, it requires only a few ingredients that you probably already have in the house.
Don't peel the potatoes and don't mash too smooth. It keeps things simple, adds to the rustic nature of the dish plus you get the added fibre and nutritional value of the skin.
Rustic Garlic Mashed Potatoes:
2 lbs potatoes, skin on, cut into 1/4's
3 cloves of garlic
1 tsp salt
1/4 tsp ground black pepper
Steam (or boil) the potatoes and garlic until tender
Roughly mash and add spices.
Add a sprig of parsley or fresh rosemary to garnish and serve.
This is a great recipe to adjust depending on individual preferences so if you are a garlic lover, add more garlic!
